Why Honey Changes Colour? Discover

Have you ever noticed that one jar of honey is almost clear, while another is golden yellow or light amber? If you’ve wondered whether something is wrong, you would be pleased to know that colour variations are perfectly natural in honey.

What Determines the Colour of Honey?

The first thing to know is that the flowers bees visit have a big influence on the colour of honey. Different floral sources produce honey with different characteristics, which is why some varieties are naturally pale while others are much darker.

Interestingly, even honey from the same floral source can look different from one harvest to another.

Take Kashmiri acacia honey, for example. Although it comes predominantly from acacia nectar, its colour can vary between batches.why honey changes colour Differences in location, weather, flowering conditions and nectar composition can all contribute to this variation.

Can Honey Change Colour Over Time?

Yes, what happens after harvesting matters. As honey ages, its natural sugars and other components slowly interact with one another, sometimes causing its colour to deepen. These natural processes include the Maillard reaction, involving sugars and amino compounds; sugar breakdown, which can produce colour-forming compounds; and reactions involving polyphenols, naturally occurring plant compounds. The extent of these changes depends on honey composition, temperature and storage conditions. Crystallisation can make it look lighter or creamier because the crystals scatter light differently.
